Grana Padano Is Not a Cheaper Parmigiano Reggiano

Most American buyers can describe Parmigiano Reggiano and very few can describe Grana Padano, so the second cheese gets sold as a discount version of the first. That framing loses money, because it invites the shopper to treat the price gap as a quality gap and nothing else.

They are two separate PDO cheeses with separate rules. The price difference is a consequence of those rules, not a discount. Once you can say what the rules are, the cheaper cheese stops being the compromise on the shelf and starts being the right cheese for a particular shopper.

The Lysozyme Question, and Why Your Label Team Will Ask It

Lysozyme is added to the vat in Grana Padano production to stop the cheese blowing during ripening. It is derived from egg white, and egg is one of the major allergens that has to be declared on a United States label.

This is not a food safety problem and it is not a reason to avoid the cheese. It is a reason to fix the artwork before the production run rather than after the container sails. Ask the dairy whether lysozyme is used, get the answer in writing on the specification sheet, and make sure your label reflects it. A buyer who discovers this at the port has a relabelling job on their hands.

It is also the honest answer to a shopper question you will eventually get, which is why two cheeses that look almost identical are made differently.

Which Grade Should You Buy?

Grana Padano is sold in three official ageing grades, and the grade decides the channel far more than the brand does:

Most importers should build the programme on the first two grades. Riserva is a range-completing line, not a volume driver.

How the Consortium Marks a Wheel

Ageing runs from a minimum of nine months, and the inspection happens at the end of it. A wheel that passes receives the fire-branded mark that certifies it as Grana Padano PDO. A wheel that fails has the diamond-shaped rind lozenges struck through with X marks, so it can no longer be sold under the name.

If you buy cut product rather than whole wheels, ask for the lot documentation that ties the cut back to a marked wheel. That paperwork is what your own customers’ compliance teams will ask for.

Formats, and Where the Growth Is

The reference format is the whole wheel at 24 to 40 kg, cut down into halves, quarters and smaller pieces for a deli to open and portion. Retail wedges are vacuum packed at fixed weights. Grated and shaved packs serve foodservice and travel best when the pack is nitrogen flushed.

The commercial point is that the growth in this category is in the grated and shaved formats rather than in whole wheels, and grated hard cheese exports have been rising faster in value than in volume. Every cut stage costs yield, so a wedge programme will always price higher per kilo than wheels. This is a chilled product and it ships in a reefer container alongside other chilled Italian lines. Importing Grana Padano into the USA

Raw-milk cheese may be imported into the United States when it has been aged at least 60 days. Grana Padano is aged a minimum of nine months, so the ageing rule is not the obstacle. The rest is the standard food import sequence: the producing dairy holds an FDA food facility registration, you as the importer meet your FSVP obligations, Prior Notice is filed before arrival, and a licensed customs broker files the entry.
